Made from Cellina di Nardò, Apulian Ogliarola and Coratina olives varieties. From the regions of Salento, Puglia. Located on red, stony earth rich in limestone fragments.
The oil is Golden yellow with reflective hues of green with a bouquet of warm and broad with delicate aromas which hint at almonds and spices.
Its flavour is fruity, hot and intense with a slightly spicy end notes which become less persistent as time passes.
This oil goes perfectly with regional cuisines rich in fish dishes and grilled or raw vegetables. Also ideally suited as a condiment to fresh stretched-curd cheeses like mozzarella or the typically Apulian stracciatella.
